Grandma Meme's Cherry Coke Jello Salad

Grandma Meme’s Cherry Coke Jello Salad

  • Total Time: 20 minutes

Ingredients

  • 2 packages (3 oz each) cherry flavored plant-based gelatin powder
  • 2 cups boiling water
  • 1 can (12 oz) cherry flavored cola
  • 1 can (15 oz) dark sweet cherries, pitted and drained
  • 1 can (8 oz) crushed pineapple, drained
  • 1/2 cup chopped pecans

Instructions

  1. Place the cherry flavored plant-based gelatin powder into a large heat-proof mixing bowl. Pour the boiling water over the powder and whisk constantly for about two minutes until the powder is completely dissolved and no granules remain at the bottom.
  2. Gently pour the cherry flavored cola into the gelatin mixture. Stir slowly to combine the liquids without creating too much foam, which helps maintain a clear and beautiful appearance once the dish sets.
  3. Ensure that your canned cherries and crushed pineapple are thoroughly drained to prevent excess liquid from thinning the mixture. If the cherries are very large, you can cut them in half to ensure they are evenly distributed throughout the dish.
  4. Add the drained cherries, crushed pineapple, and chopped pecans into the bowl. Stir gently so that the fruit and nuts are well incorporated into the liquid base.
  5. Carefully pour the mixture into a glass serving bowl or a decorative mold. Place it in the refrigerator for at least 4 to 6 hours, or ideally overnight, until the salad is completely firm and ready to be sliced or scooped.
