Easy Honey Garlic Butter Roasted Carrots

Easy Honey Garlic Butter Roasted Carrots

  • Total Time: 35 minutes

Ingredients

  • 2 pounds carrots, peeled and trimmed
  • 1/4 cup unsalted butter, melted
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Start by preheating your oven to 400 degrees Fahrenheit. While the oven is warming up, wash and peel your carrots. If they are very thick, slice them in half lengthwise or cut them into large diagonal chunks so they cook evenly throughout.
  2. In a small mixing bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper. Ensure the honey is well incorporated into the butter so the glaze is smooth and coats the vegetables evenly.
  3. Place the prepared carrots on a large rimmed baking sheet. Pour the honey garlic butter mixture over the carrots and use a spatula or your hands to toss them until every inch is thoroughly coated. Spread them out in a single layer, ensuring they are not overcrowded so they can roast instead of steam.
  4. Slide the baking sheet into the oven and roast for about 20 to 25 minutes. Halfway through the cooking time, use a spatula to toss the carrots on the pan. This ensures that the glaze does not burn on the bottom and that the carrots get a nice golden color on all sides.
  5. Once the carrots are tender when pierced with a fork and the glaze is bubbly and thick, remove them from the oven. Transfer them to a festive serving platter and sprinkle with fresh chopped parsley for a pop of Christmas color before serving warm.
