Place a small bowl or a large wide-mouth jar in the center of a large circular serving platter. Arrange the arugula or baby spinach around the bowl to create a thick, even ring of greens. Once the shape is established, you can gently remove the bowl to reveal the perfect wreath shape, or leave it in place if you plan to put a dipping sauce inside later.
Evenly scatter the halved cherry tomatoes and the mozzarella pearls over the bed of greens. Think of these as the ornaments on your wreath. I like to tuck some of the cheese pearls slightly under the leaves so the salad looks full and multi-dimensional.
Sprinkle the pomegranate arils across the top for a glittery, jewel-like effect. Follow this with the toasted pine nuts and the torn basil leaves. The basil adds a wonderful aromatic quality that hits your guests as soon as the plate reaches the table.
In a small jar, whisk together the olive oil, dried oregano, salt, and pepper. Drizzle this mixture evenly over the wreath just before serving. Finish the presentation by drizzling the thick balsamic glaze in a decorative zig-zag pattern around the entire ring.
