Christmas Morning Fruit Salad

Christmas Morning Fruit Salad

  • Total Time: 15 minutes

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups green grapes, halved
  • 3 kiwis, peeled and sliced into half-moons
  • 1 cup pomegranate seeds
  • 2 large green apples, cored and diced
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon alcohol-free vanilla extract
  • 2 tablespoons fresh mint leaves, chopped

Instructions

  1. Start by washing all your fresh produce thoroughly. Slice the strawberries, halve the grapes, and peel the kiwis before cutting them into bite-sized pieces. Dice the green apples last to minimize browning, and ensure the pomegranate seeds are free of any white pith.
  2. In a small glass jar or bowl, whisk together the honey, fresh lime juice, and alcohol-free vanilla extract. This light glaze will enhance the natural flavors of the fruit without overpowering them or making the salad too heavy.
  3. Place all the prepared fruit into a large, decorative glass bowl. Pour the dressing over the fruit and gently toss with a large spoon or spatula. Be careful not to bruise the softer fruits like the strawberries and kiwis while mixing.
  4. Sprinkle the chopped fresh mint leaves over the top of the salad for an extra hit of freshness and a beautiful green garnish. You can serve this immediately or let it sit for a few minutes to allow the flavors to meld together.
